Salt and black pepper, to taste
Olive oil, for frying and sautéing
1/2 onion, finely chopped
3 cloves of garlic, minced
1 lemon, juiced
30 g Parmesan cheese, grated, plus extra for garnish
70-100 grams spinach
2-3 tablespoons olive oil (additional for sautéing)
25 g butter
100 ml dry white wine
200 ml of 15-20% cream
1 carrot, peeled and sliced
Extra onion (use remaining half), chopped
