Place the chicken thighs, lamb chops, and beef sausages in separate shallow dishes and pour the marinade over them. Cover and refrigerate for at least 1 hour, or preferably overnight. Preheat your grill to medium-high heat. Remove the meats from the marinade and let any excess drip off. Thread the chicken thighs, lamb chops, and beef sausages onto separate skewers. In a large bowl, toss the sliced bell peppers, red onion, mushrooms, and zucchinis with olive oil, minced garlic, salt, and pepper. Place the skewered meats and the seasoned vegetables onto the grill. Cook the meats for about 6-8 minutes per side, or until they are cooked to your desired level of doneness. Cook the vegetables until they are tender and slightly charred, about 8-10 minutes. Once everything is cooked, remove from the grill and arrange on a serving platter.
