THE BEST MIXED GRILL Ingredients: 4 chicken thighs, boneless and skinless 4 lamb chops 4 beef sausages 2 bell peppers, sliced 1 large red onion, sliced 8 button mushrooms 2 zucchinis, sliced 2 tablespoons olive oil Salt and pepper to taste 2 cloves garlic, minced 1 lemon, sliced for garnish Fresh parsley, chopped for garnish Marinade: 1/4 cup olive oil 2 tablespoons balsamic vinegar 2 cloves garlic, minced 1 teaspoon dried oregano 1 teaspoon dried thyme Salt and pepper to taste Instructions: In a bowl, mix together all the ingredients for the marinade. Place the chicken thighs, lamb chops, and beef sausages in separate shallow dishes and pour the marinade over them. Cover and refrigerate for at least 1 hour, or preferably overnight. Preheat your grill to medium-high heat. Remove the meats from the marinade and let any excess drip off. Thread the chicken thighs, lamb chops, and beef sausages onto separate skewers. In a large bowl, toss the sliced bell peppers, red onion, mushrooms, and zucchinis with olive oil, minced garlic, salt, and pepper. Place the skewered meats and the seasoned vegetables onto the grill. Cook the meats for about 6-8 minutes per side, or until they are cooked to your desired level of doneness.
