1. Prepare the Pork:
Heat 1 tablespoon of olive oil in a large pot over medium-high heat. Add the pork chunks and season with salt and pepper. Brown the meat on all sides, about 5-7 minutes. Remove the pork from the pot and set aside.

In the same pot, add the remaining tablespoon of olive oil. Add the chopped onion and garlic. Sauté until softened, about 3-4 minutes.

Return the browned pork to the pot and pour the green sauce over the meat. Add the remaining chicken broth to cover the meat. Stir to combine. Bring to a boil, then reduce the heat and simmer for 45 minutes to 1 hour, or until the pork is tender and the flavors have melded together. Adjust seasoning with salt and pepper to taste.
5. Serve:
Garnish with fresh cilantro and serve with warm tortillas or over rice. Add a squeeze of lime juice for extra freshness.
