Preheat the oven to 400°F (200°C).
Place the mushrooms in a microwave-safe bowl and microwave for 2 ½ to 3 minutes to soften. Drain and set aside.
Lightly brush one side of each tortilla with olive oil (optional) and place them on a baking sheet, oiled side down.
Distribute half of the mozzarella and cheddar over one side of each tortilla.
Layer the spinach and mushrooms, then add the remaining cheese. Fold the tortillas in half.
Bake for 6 minutes, then flip and bake for another 6-7 minutes until the cheese melts and the tortillas turn golden brown.
Garnish with additional mushrooms and cheese if desired.
