Boston Cream Pie Cheesecake
Prepare the Pastry Cream: In a saucepan, heat the whole milk over medium heat until it simmers. In a separate bowl, whisk together the egg yolks, sugar, and cornstarch until smooth. Gradually whisk the hot milk into the egg mixture, then return everything to the saucepan. Cook over medium heat, whisking constantly until thickened. Remove from heat, then stir in the vanilla extract and butter. Allow it to cool completely.
Layer the Pastry Cream: Once the cheesecake has cooled, evenly spread the pastry cream over the top of the cheesecake.
Make the Chocolate Ganache: In a small saucepan, heat the heavy cream until it just begins to boil. Pour this hot cream over the chocolate chips in a bowl. Let it sit for about a minute, then stir until the mixture is smooth and glossy.
Finish the Cheesecake: Pour the chocolate ganache over the layer of pastry cream. Chill the cheesecake in the refrigerator for at least 4 hours to set properly before serving.
