  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Cajun seasoning
  • 1/4 teaspoon paprika
  • Salt and black pepper to taste
  • 6 medium shrimp, cooked and peeled
  • Fresh chives, chopped, for garnish
  • Smoked paprika, for garnish

Instructions:

Boiling the Eggs

  1. Boil the Eggs: Place the eggs in a saucepan and cover with cold water. Bring the water to a boil over medium-high heat.
  2. Simmer: Once the water reaches a boil, reduce the heat to low and let the eggs simmer for 10-12 minutes.
  3. Ice Bath: Remove the eggs from the saucepan and transfer them to an ice bath to cool for about 5 minutes.

Preparing the Filling
