1. Prepare the Filling
- In a mixing bowl, combine the shredded cheese, ricotta cheese (if using), and half of the beaten egg (reserve the other half for brushing the pastry).
- Season with salt and pepper to taste, and add in the chopped herbs if you’d like a touch of extra flavor.
- Stir the mixture well until all the ingredients are evenly combined.
2. Prepare the Puff Pastry
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- On a lightly floured surface, roll out the puff pastry sheet to ensure it’s even and large enough to hold the filling. You can trim the edges slightly if needed.
3. Assemble the Pie
- Place half of the puff pastry on the baking sheet if you’re planning a single layer (or on the bottom if you’re making a top-and-bottom pie).
- Spoon the cheese filling onto the pastry, spreading it evenly and leaving about a 1-inch border around the edges.
- If you’re using a single layer, fold the edges up around the filling to create a border. For a double layer, place the second half of the puff pastry on top, pressing the edges together to seal.
4. Brush and Garnish
- Brush the top of the pastry (or the edges if it’s single-layer) with the remaining beaten egg to give it a golden color when baked.
- Sprinkle sesame seeds or poppy seeds on top for extra texture and flavor if desired.
5. Bake the Cheese Pie
- Place the pie in the preheated oven and bake for 20-25 minutes, or until the pastry is puffed up and golden brown.
- Let it cool for a few minutes on the baking sheet before slicing.
