Step 1: Prepare the Cheesecake Filling
- Mix the filling ingredients: In a medium bowl, beat together the softened cream cheese, granulated sugar, vanilla extract, and egg yolk until smooth and creamy. Set aside.
Step 2: Make the Cookie Dough
- Cream the butters and sugars: In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy.
- Add eggs and vanilla: Mix in the eggs, one at a time, followed by the vanilla extract.
- Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the chocolate chips.
Step 3: Assemble the Cookies
- Preheat the oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Scoop the cookie dough: Use a cookie scoop or tablespoon to take a portion of cookie dough and flatten it slightly in your palm.
- Add the cheesecake filling: Place about a teaspoon of the cheesecake filling in the center of the flattened dough.
- Seal the dough: Take another piece of cookie dough and place it on top of the filling. Gently press the edges to seal, rolling it into a ball if needed.
- Place on baking sheet: Arrange the stuffed cookies on the prepared baking sheet, leaving space between each one.
Step 4: Bake the Cookies
- Bake: Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden. The centers may look slightly underbaked, but they will firm up as they cool.
- Cool: Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
