Cheesy Zucchini Bake

Directions:
Prepare the Zucchini:
Grate the 5 zucchini and place them in a bowl. Add a pinch of salt and let them drain for 10 minutes to remove excess moisture. After draining, squeeze out any remaining water.
Mix the Batter:
In a separate bowl, beat the 3 eggs. Season with salt and pepper to taste.

Add the drained zucchini to the eggs and mix well.
Gradually add 120g of wheat flour to the mixture, stirring until well combined.
First Bake:
Preheat your oven to 360°F (180°C).
Spread the zucchini mixture evenly in a baking dish.
Bake for 15 minutes.

Add Cheese and Toppings:
Remove the dish from the oven and sprinkle 80g of shredded scamorza cheese (or another cheese) evenly over the top.
Arrange thin slices of the small zucchini on top of the cheese.

Drizzle with olive oil and sprinkle with oregano to taste.
