For the Cottage Cheese Layer

  • 1 cup cottage cheese
  • 2 tablespoons honey (or maple syrup)
  • 1 teaspoon vanilla extract

For the Cherry Topping

  • 1 cup fresh or frozen cherries (pitted)
  • 2 tablespoons sugar (or a natural sweetener like honey)
  • 1 teaspoon lemon juice
  • 1 teaspoon cornstarch mixed with 1 tablespoon water

Step-by-Step Instructions

Step 1: Prepare the Cake Batter

  1. Preheat your oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, almond flour, unsweetened cocoa powder, brown sugar, baking powder, baking soda, salt, and optional cinnamon. Mix until evenly distributed.
  3. In another bowl, whisk together the almond milk, melted coconut oil, eggs, and vanilla extract until smooth.
  4. Gradually pour the wet mixture into the dry ingredients. Stir gently until the batter is smooth and free of lumps.
  5. Fold in the chopped dark chocolate for bursts of rich flavor in every bite.
  6. Pour the batter into the prepared cake pan. Sprinkle sliced almonds over the top for added crunch and nutty flavor.

Step 2: Bake the Cake

  1. Bake the cake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  2. Once baked, remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Step 3: Blend the Cottage Cheese Layer

  1. While the cake cools, prepare the cottage cheese topping. In a food processor or blender, blend cottage cheese, honey, and vanilla extract until smooth and creamy.
  2. Place the blended mixture in the refrigerator to chill while you prepare the cherry topping.
