Prepare the dough
In a large bowl, dissolve the dry brewer’s yeast in the warm milk along with a teaspoon of sugar. Let it sit for 5-10 minutes until it foams on the surface.
Add the eggs, sugar, melted butter and a pinch of salt. Mix well.
Gradually add the flour and knead until the dough is smooth and elastic. If necessary, add a little more flour.
Cover the dough with a cloth and let it rise in a warm place for about 1 hour, or until it doubles in volume.
Prepare the filling
In a bowl, mix the brown sugar with the ground cinnamon.
Spread the soft butter evenly over the rolled out dough.

Form the rolls
After rising, roll out the dough on a lightly floured surface into a rectangle about 1cm thick.
Spread the cinnamon-sugar mixture evenly over the buttered dough.
Roll the dough up from the longest side to form a compact cylinder.
Cut the cylinder into slices about 3-4cm thick. Place the rolls on a greased or parchment-lined baking sheet, leaving a little space between them.
