Ingredients:
100g butter at room temperature
1 egg
1 teaspoon vanilla
1/3 cup oil
1/2 cup sugar
1 cup shredded coconut
2 cups flour
1/2 teaspoon baking powder
Pinch of salt
Galaxy or Kinder chocolate
Method
In a mixer, beat the butter, egg, vanilla, oil and sugar until smooth.
Add the grated coconut, sifted flour, baking powder and pinch of salt, then knead everything by hand.
Form balls with the dough and place them on a baking sheet. You can shape them into fingers or use maamoul molds.
Dip the tops of the cookies in grated coconut and bake at 180°C for 10 to 12 minutes.
Once cooled, you can dip them in melted chocolate for an even more delicious touch.
