Crispy Funnel Cake Sticks

Prepare the Batter:

In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, and cinnamon (if using). In another bowl, beat the eggs, then add the milk and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until combined into a smooth batter. Let the batter sit for 5-10 minutes to thicken slightly.

Heat the Oil:

In a deep fryer or large pot, heat vegetable oil to 350°F (175°C). Make sure you have enough oil to fully submerge the funnel cake sticks.

Fry the Funnel Cake Sticks:

Fit a piping bag or a plastic bottle with a small opening. Fill it with the batter and carefully pipe straight lines into the hot oil, making long, criss-cross shapes to form the funnel cake sticks. Fry for 1-2 minutes on each side, or until golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.
