Tips for Success
Use a mix of ground beef with some fat content (80/20) to keep the meatloaf moist.
Don’t overmix the ingredients; it can make the meatloaf dense.
Line the crockpot with parchment paper or use a slow cooker liner for easy removal.
For caramelized onions, cook them low and slow in butter until they’re golden and sweet.
Add the Swiss cheese during the last 15–20 minutes of cooking to ensure it melts perfectly without burning.
Instructions
In a large bowl, combine ground beef, breadcrumbs, beaten eggs, dry soup mix, milk, caramelized onions (if using), Worcestershire sauce, garlic powder, onion powder, and black pepper. Mix until just combined.
Shape the mixture into a loaf and place it in the crockpot.
Cover and cook on low for 6–7 hours or on high for 3–4 hours.
About 15–20 minutes before serving, layer Swiss cheese slices on top of the meatloaf. Cover again to let the cheese melt.
Once done, carefully remove the meatloaf from the crockpot, slice, and serve. Garnish with parsley if desired.
