3-4 lb beef chuck roast
Salt and black pepper, to taste
2 tbsp olive oil
1 large onion, chopped
4 cloves garlic, minced
4 cups beef broth
2 tbsp tomato paste
1 tbsp Worcestershire sauce
4 large carrots, peeled and cut into chunks
4-5 medium potatoes, cut into chunks
3 sprigs fresh thyme (or 1/2 tsp dried thyme)
2 sprigs fresh rosemary (or 1/2 tsp dried rosemary)
Fresh parsley, chopped, for garnish
