 Dutch Oven Pot Roast with Vegetables

Ingredients:
3-4 lb beef chuck roast 🥩
Salt and black pepper, to taste 🧂
2 tbsp olive oil 🫒
1 large onion, chopped 🧅
4 cloves garlic, minced 🧄
4 cups beef broth 🍲
2 tbsp tomato paste 🍅
1 tbsp Worcestershire sauce 🥄
4 large carrots, peeled and cut into chunks 🥕
4-5 medium potatoes, cut into chunks 🥔
3 sprigs fresh thyme (or 1/2 tsp dried thyme) 🌿
2 sprigs fresh rosemary (or 1/2 tsp dried rosemary) 🌿
Fresh parsley, chopped, for garnish 🌿
