10 cups water
2/3 cup baking soda
For the Topping:
2 tablespoons melted butter (for brushing)
Kosher salt, to taste
Instructions:
1. Make the Dough:
In a large bowl, combine the warm water, sugar, and yeast. Stir and let it sit for 5-10 minutes, until the mixture becomes frothy.
Add the flour, salt, and melted butter to the yeast mixture. Stir until the dough begins to form.
Turn the dough out onto a lightly floured surface and knead for about 5-7 minutes, until the dough is smooth and elastic.
Place the dough in a lightly greased bowl, cover with a clean kitchen towel or plastic wrap, and let it rise in a warm place for about 1 hour or until doubled in size.
2. Preheat the Oven and Prepare the Pretzel Bath:
Preheat your oven to 450°F (230°C). Line two baking sheets with parchment paper and set aside.
In a large pot, bring the 10 cups of water and baking soda to a boil. Reduce heat and keep it at a simmer while you shape the pretzels.

Once the dough has risen, punch it down and divide it into 8 equal portions.
Roll each portion into a long rope (about 18 inches long). To shape the pretzels, make a “U” shape, then twist the ends of the rope around to form a circle, and fold the ends down to make the classic pretzel shape.
Place the shaped pretzels onto a parchment-lined baking sheet.
4. Boil the Pretzels:
Carefully drop the shaped pretzels one at a time into the simmering water-baking soda mixture. Boil each pretzel for about 30 seconds, then use a slotted spoon to remove it and place it back on the baking sheet.
Repeat with the remaining pretzels.
5. Bake the Pretzels:
Once all the pretzels are boiled, brush them with melted butter and sprinkle with kosher salt.
Bake in the preheated oven for 12-15 minutes, or until the pretzels are golden brown.
6. Serve:
Remove the pretzels from the oven and let them cool slightly before serving.
For extra flavor, you can brush them with more melted butter after baking.
