Easy Sponge Cake Recipe Ingredients: 1 cup cake flour ⅞ cup white sugar (divided) ½ tsp baking powder ¼ tsp salt ½ tsp cream of tartar (optional) Wet Ingredients: 6 eggs (separate the whites and yolks) ⅓ cup vegetable oil 2 tbsp water 2 tsp honey ½ tsp vanilla extract Instructions: Preheat Oven: Preheat your oven to 350°F (175°C). Beat Egg Whites: Using a mixer, beat the egg whites and cream of tartar (if using) until foamy. Add ⅓ of the sugar and keep beating until firm peaks form (the tip of the peak should drop slightly). Set aside. Egg Yolk Mixture: In a separate bowl, mix the egg yolks, remaining sugar, salt, water, honey, and vanilla. Beat on high until the mixture becomes pale yellow and forms ribbons when lifted. Combine Mixtures: Gently fold in half of the beaten egg whites into the yolk mixture. Add Dry Ingredients: Sift the flour and baking powder into the yolk mixture in 3 parts, folding gently each time. Add the vegetable oil. Tip: Mix a bit of the batter with the oil before adding it to make it easier to combine. Finish Batter: Fold in the remaining egg whites, being careful not to deflate the batter. Bake: Line two 6-inch cake pans with parchment paper. Pour the batter into the pans and tap them to remove air bubbles. Bake for 27–30 minutes, until a toothpick inserted comes out clean and the cake is golden.
