Directions:
1. Preheat the oven to 425°F (220°C).
2. On a large baking sheet, spread out the baby potatoes, broccoli, carrots, and zucchini. Drizzle with 3 tablespoons of olive oil, and sprinkle with garlic powder, Italian herbs, salt, and pepper. Toss to coat evenly.
3. Roast the vegetables in the oven for 25-30 minutes, or until they are tender and golden brown, stirring halfway through.
4. While the vegetables are roasting, heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the steak bites and season with salt and pepper. Sear for 2-3 minutes per side until browned and cooked to your liking.
5. In the last minute of cooking, add minced garlic to the skillet with the steak and stir until fragrant.
6. Remove steak bites from heat and sprinkle with fresh parsley.
7. Serve the steak bites with the roasted vegetables on a large platter or individual plates.
