Greek Chicken with Lemon and Feta
Ingredients:
1 lemon, juiced and zested
1/4 cup extra virgin olive oil
3 garlic cloves, finely minced (or 1 tsp dried garlic powder)
1 tsp dried oregano
1/2 tsp smoked paprika
1/2 tsp + a pinch of sea salt
1/4 tsp coarse black pepper
1 pound of thin-sliced chicken breast
Garnish:
1/4 cup feta cheese
1/4 cup fresh chopped parsley
Additional wedges of lemon

Make Marinade and Marinate:
In a large mixing bowl, combine lemon zest, lemon juice, olive oil, garlic, oregano, smoked paprika, sea salt, and black pepper. Mix until well emulsified. Reserve ¼ cup of the marinade for later use. Add the chicken to the bowl with the remaining marinade, ensuring each piece is fully coated. Cover and refrigerate for 30 minutes.
Cook Chicken:
Heat a nonstick skillet over medium-high heat. Add a drizzle of olive oil. Place the marinated chicken in the pan and sear until the bottom is golden brown, about 3-4 minutes. Flip the chicken and continue to cook until it is cooked through and the juices run clear, another 3-4 minutes.
To Finish:
Transfer the cooked chicken to a serving plate. Drizzle with the reserved marinade. Sprinkle with chopped parsley and crumbled feta cheese. Serve with additional lemon wedges.
