Grilled Vietnamese Chicken Wings
For the Chicken Wings:
- 2 pounds chicken wings
- Fresh cilantro, chopped (for garnish)
- Chopped peanuts (for garnish)
- Lime wedges (for serving)
For the Dipping Sauce:
- 1/4 cup fish sauce
- 1/4 cup lime juice
- 2 tablespoons sugar
- 2 cloves garlic, minced
- 1 Thai chili, finely chopped (optional)
Instructions
Step 1: Prepare the Marinade
- Mix the Marinade Ingredients: In a large bowl, combine the fish sauce, soy sauce, brown sugar, honey, minced garlic, chopped lemongrass, grated ginger, lime juice, chili flakes (if using), and vegetable oil. Whisk until the sugar is dissolved and the ingredients are well combined.
- Marinate the Chicken: Add the chicken wings to the bowl, ensuring they are fully coated with the marinade. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to fully penetrate the meat.
Step 2: Prepare the Dipping Sauce
- Combine Dipping Sauce Ingredients: In a small bowl, mix together the fish sauce, lime juice, sugar, minced garlic, and chopped Thai chili (if using). Stir until the sugar is completely dissolved. Set aside until ready to serve.
