30 g (⅓ cup) sugar-free white chocolate, melted

Instructions
1. Prepare the Ingredients
Preheat your oven to 180°C (350°F).
Grease a round or rectangular baking mold with olive oil and set aside.
Grate the carrots and apples, then set them aside in separate bowls.
2. Combine Wet Ingredients
In a large mixing bowl, whisk the eggs until slightly frothy.
Add the grated carrots, apples, water, vanilla extract, and yogurt to the eggs. Mix well.
Sweeten the mixture with stevia, adjusting to your taste.
3. Add the Dry Ingredients
In a separate bowl, combine the oatmeal, baking powder, dried apricots, raisins, almonds, and walnuts.
Gradually fold the dry ingredients into the wet mixture until evenly combined.
4. Bake
Pour the batter into the prepared baking mold, smoothing out the surface.
Bake in the preheated oven for 50 minutes, or until a toothpick inserted into the center comes out clean.
5. Garnish
Let the cake cool in the mold for 10 minutes, then transfer it to a wire rack to cool completely.
Melt the sugar-free white chocolate and drizzle it over the top of the cooled cake.
6. Serve
Slice the cake and serve as a healthy breakfast, snack, or dessert.
