Instructions
Step 1: Prepare the Ingredients
- Chop and dice: Finely chop the onion, dice the carrot and tomato, mince the garlic, and slice the potatoes.
Step 2: Cook the Ground Beef
- Sauté onion: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Brown the beef: Add the ground beef to the skillet and cook until browned. Season with salt, black pepper, chili powder, thyme, and dried parsley.
Step 3: Add Vegetables and Stock
- Mix in vegetables: Stir in the minced garlic, diced carrot, diced tomato, and frozen peas.
- Thicken the mixture: Sprinkle the flour over the mixture and stir well to combine. Then, add the vegetable stock and simmer for 5-7 minutes until thickened.
Step 4: Layer the Potatoes
- Preheat the oven: Preheat your oven to 375°F (190°C).
- Grease the baking dish: Lightly grease a baking dish with oil.
- Layer ingredients: Layer the sliced potatoes in the bottom of the dish. Top with the ground beef mixture, then layer the remaining potato slices on top. Season the top layer with a little salt and pepper.
Step 5: Bake
- Cover and bake: Cover the dish with foil and bake in the preheated oven for 30 minutes.
- Uncover and finish baking: Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and golden on top.
Step 6: Serve
- Garnish and enjoy: If desired, garnish with fresh parsley before serving.
