Prepare the coffee cream: Combine cream, coffee, and vanilla sugar in a saucepan. Heat over low heat until coffee is dissolved. Let cool slightly. Mix with ricotta and condensed milk.
Prepare the banana layer: Mash bananas and combine with egg yolk.
Prepare the custard: Heat milk, thicken with cornstarch, and combine with banana mixture.
Whip the cream: Whip whipping cream until soft peaks form. Fold into coffee cream.
Assemble the dessert: Layer banana custard, coffee cream mixture in serving glasses. Chill for 30 minutes.
Decorate and serve: Grate chocolate over the top. Serve chilled.
