In a small bowl, combine the minced garlic with the melted butter. Divide the garlic butter mixture in halves and spread it out equally over the bread.
Put the olive oil in a pan and set it over medium heat. Throw in the shrimp, squeeze in the lemon juice, season with salt, and pepper. Grill the shrimp for three to four minutes, or until they become pink and opaque. Take off the stove and put aside.
While the stove is on medium heat, prepare a big griddle or nonstick pan. Toast a piece of bread in a pan with the garlic butter side facing down.

It should take about three to four minutes for the bottom slice to get crispy and golden brown. After 3–4 minutes, carefully turn the sandwich over and cook until golden and cheese has melted.
After taking the sandwich out of the pan, let it aside to rest for one minute. Then, slice it. Proceed with the other sandwiches in the same way.
For an aesthetic and taste boost, top off each sandwich with a sprinkle of dried parsley.
Tips and Variations

Go ahead and experiment with your cheeses if you like! The sharpness is enhanced by a combination of mozzarella and cheddar. Swap out the shrimp with cooked chicken or crispy bacon if you like. To give the garlic butter a little more heat, you might add a pinch of red pepper flakes. You may use pre-cooked shrimp to save some time if you’re in a rush.
