. Prepare the Potatoes:

Flatten the Potatoes: Start by cutting the bottom of each potato to create a flat surface. This helps them cook evenly. Optionally, you can peel the potatoes if you prefer a smoother texture, but leaving the skin on adds extra crunch and flavor.
Soak the Potatoes: Place the potatoes in a bowl of cold water and let them soak for a few minutes. This helps remove excess starch and results in a crispier texture. Rinse the potatoes several times with cold water until the water runs clear. Keep the potatoes wet throughout the process to ensure the coating sticks well.
2. Season and Coat the Potatoes:

Mix the Seasonings: In a large bowl, combine salt, pepper, parmesan cheese (if using), chili powder, and potato starch. Mix well.
Coat the Potatoes: Add the wet potatoes to the bowl and toss them in the seasoning mixture. Make sure the potatoes are evenly coated with the spices and starch. The potato starch helps to create a crispy coating when fried.
3. Cook the Potato Pancake:
