Italian lemon sponge cake

2- Beat eggs and sugar until frothy: In a large bowl, beat eggs with sugar and a pinch of salt for 3-4 minutes until light and creamy.

3- Add the liquid ingredients: Add the olive oil, milk, lemon juice and zest to the egg mixture and mix well.
4- Incorporate the flour and baking powder: Mix the flour with the baking powder and gently incorporate into the wet ingredients until you obtain a smooth dough.

5- Baking: Pour the batter into the prepared loaf pan and bake in the preheated oven for about 40-45 minutes. Test with a toothpick: if it comes out clean, the cake is ready.

6- Cooling and dusting: Remove the lemon cake from the oven and let it cool briefly in the pan, then turn it out onto a wire rack. Dust with powdered sugar before serving.
