In a bowl, whip the fresh cream with the sugar until it becomes soft and whipped.
Separately, mix the mascarpone in a separate bowl until it becomes creamy.
Gently combine the mascarpone with the whipped cream, mixing with a spatula from the bottom up so as not to deflate the mixture.
Prepare the pineapple:
If you use fresh pineapple, peel it, cut it in half, remove the hard heart and cut it into small cubes. You can also sprinkle it with a little lemon juice to keep the color bright.
If you use pineapple in syrup, drain it well and cut it into pieces.
Assemble the semifreddo:
In a baking dish or in individual molds, start by creating a layer of ladyfingers. If you like, you can moisten them with a little pineapple syrup (or rum) to make them even softer.
Cover with a layer of mascarpone cream.
Add a layer of pineapple pieces on top of the cream.
Repeat the layers: ladyfingers, cream and pineapple, until you run out of ingredients. Finish with a layer of cream on top.
