Directions:
Prepare the ingredients:
Measure 1 cup of rolled oats.
Mash 1 banana.
Measure 5 tablespoons of ricotta.
Measure 5 tablespoons of egg white.
Squeeze the juice of 1 lemon (about 30 ml).
Mix the ingredients:
In a bowl, mix the oatmeal, mashed banana, ricotta, egg white and lemon juice.
Add a pinch of vanillin, Spanish saffron and turmeric.
Sweeten with stevia to taste.
Bake the muffins:
Preheat the oven to 180°C (360°F).
Divide mixture evenly into a muffin tin lined with muffin paper or lightly greased.
Bake for 40 minutes.
Cool and serve:
Let muffins cool for 30 minutes before serving.
