Meat and Tortilla Roll

In a bowl, combine the minced meat, salt, pepper, and paprika. Mix well.
In a skillet, heat the olive oil over medium heat. Add the seasoned minced meat and cook, breaking it up with a spoon, until browned and fully cooked (about 7-8 minutes). Remove from heat and set aside.
Prepare the Egg Mixture:

In a small bowl, beat the egg yolks with the milk until smooth. Add the mozzarella cheese and stir to combine.
Assemble the Tortilla Rolls:

Place the tortillas on a flat surface. Divide the cooked minced meat evenly between the two tortillas, spreading it out in a thin layer.
Drizzle the egg mixture over the meat, and then sprinkle the shredded mozzarella cheese on top.
Roll up the tortillas tightly, folding in the edges as you go to ensure the filling stays inside.
Cook the Rolls:

Preheat a large skillet over medium heat. Brush the skillet with the melted butter.
Place the rolled tortillas seam side down in the skillet. Cook for about 3-4 minutes per side until they are golden brown and crispy, and the cheese has melted inside.
Serve:

Slice the tortilla rolls into halves or thirds, and serve immediately. You can serve them with a dipping sauce, salad, or a side of guacamole.
