My Jewish neighbor brought me this as a gift and I couldn’t help but eat it!
1 cup vegetable oil
4 large eggs
1/4 cup orange juice
2 1/2 teaspoons vanilla extract
Directions
Preheat your oven to 350°F (175°C). Grease and flour a Bundt cake pan and set aside.
In a large bowl, toss the apple slices with the ground cinnamon and 1/2 cup of the sugar. Set this mixture aside to let the flavors blend.
In another large bowl, sift together the flour, baking powder, remaining 2 cups sugar and salt.
In a separate bowl, whisk together vegetable oil, eggs, orange juice and vanilla extract until well combined.
Gradually add the wet ingredients to the dry ingredients, mixing until well combined. Be careful not to overmix.
