Oat Cake with Carrots, Apricots and Raisins

Procedure:
1. Preparing the Apricots and Raisins:
– Place the dried apricots and raisins in a bowl and cover with hot water. Let them soak for a few minutes to soften them.
– Drain the water and cut the apricots into small pieces.

2. Preparing the Fruit and Other Ingredients:
– Grate the carrot and apple.
– In a large bowl, mix the oat flakes with the baking powder.
– Add the milk and mix well.
– Add the grated carrot, grated apple, chopped apricots and raisins. Mix until smooth.
3. Making the Dough:
– In a separate bowl, beat the eggs with a pinch of salt, sweetener and vanilla extract.
– Add the beaten eggs to the oat and fruit mixture, mixing well.
– Finally, add 1-2 tablespoons of olive oil and mix until fully incorporated.
