For the Onion:

Step 1: Prepare the Onion π§
- Cut the Onion: Peel the onion and slice about 1 inch off the top, leaving the root intact. Turn the onion so the root is facing down. Using a sharp knife, cut 4-6 vertical slices around the onion, but be careful not to cut through the root. Then, carefully separate the layers, forming the “bloom” shape.
- Soak the Onion: Place the onion in a bowl of buttermilk and let it soak for 1 hour. This helps to tenderize the onion and allow the batter to stick better.
Step 2: Prepare the Batter and Dipping Sauce π΄
- Make the Dipping Sauce: In a small bowl, whisk together the mayonnaise, ketchup, Dijon mustard, horseradish, paprika, garlic powder, salt, and black pepper. Taste and adjust seasoning as needed. Refrigerate the sauce until you’re ready to serve.
- Prepare the Flour Mixture: In a large bowl, combine the flour, paprika, garlic powder, onion powder, salt, pepper, and cayenne pepper. Stir well to combine.
- Prepare the Breadcrumbs: In another bowl, place the breadcrumbs (preferably panko for a crunchier texture).
Step 3: Coat the Onion π
- After the onion has soaked in the buttermilk, carefully lift it out and allow any excess liquid to drip off.
- Gently dip the onion into the flour mixture, making sure all the layers are coated. Use your fingers to get the flour between the layers of the onion.
- After coating with the flour mixture, dip the onion back into the buttermilk for a second coat. Then, coat it thoroughly with the breadcrumbs, pressing lightly to ensure they stick.
Step 4: Fry the Onion π³
- Heat a large pot or deep fryer filled with vegetable oil to 375Β°F (190Β°C). Make sure the oil is hot enough to fry but not smoking.
- Carefully lower the coated onion into the hot oil, root side down. Fry for 3-5 minutes on each side, or until golden brown and crispy. The onion will “bloom” as it fries!
- Once cooked, remove the onion from the oil and place it on a paper towel-lined plate to drain any excess oil.
