Panettone

Instructions :
In a bowl, dissolve the yeast in the lukewarm milk and let stand for 10 minutes.

In a large bowl, mix the flour, sugar, salt, egg yolks, and milk-yeast mixture.

Knead the dough until it becomes smooth and homogeneous, then add the softened butter little by little, continuing to knead.

Add the raisins, candied fruit, vanilla, and lemon and orange zest, and mix well.

Cover and let the dough rise for 2 hours, until doubled in size.

Transfer the dough to a panettone pan and let rise for another hour.

Preheat the oven to 180°C. Bake the panettone for 35-40 minutes until golden brown.

Tips for making your homemade Panettone
Yeast and Proof

Make sure the milk is lukewarm (around 37°C), not hot, so as not to kill the yeast.

Let the dough rise in a warm, draft-free place. A tip is to place the bowl near a radiator or in a turned-off oven with the light on
