Mom’s Oven Pork Chops and Potatoes are a classic dish of meat and baked potatoes served many nights during our childhoods.
This cooking method results in tender, fork-shaped pork chops the whole family will enjoy. Plus, it’s an economical option with just 4 ingredients (plus salt and pepper).
There are dishes that define our childhood. Pork and Potato Casserole, Tuna Casserole, Salmon Fritters, Oven Roasted Pork Chops, Beef Stew, and Potato Casserole. All of these have been in regular rotation in our home, and they each hold a special place in my heart.
My mom was a master of easy dinners, including the ham-stuffed diced potato casserole. With only 4 ingredients, it is easy to prepare.
Although it takes longer to bake, if you put it in the oven as soon as you get home in the evening, you’ll have plenty of time to relax or help the kids with their homework while it bakes.

°5 white or Yukon Gold potatoes
°5 pieces of pork
°1 onion cut into cubes
°1 cup whole milk
°3 cups grated cheddar cheese
°3 tablespoons unsalted butter
°Salt and pepper to taste
+Optional: add chives or scallions, a pinch of seasoning salt, and a pinch of garlic salt to enhance the subtle flavor.
*Directions:
Peel the potatoes and cut them into slices, no more than 1/2 inch per slice
Peel and quarter the onion, dividing each quarter in half
Use a piece of cheddar cheese, grate it fresh
Preheat oven to 350*
Sprinkle the baking dish
In a large bowl, combine the potatoes, onions, cheese and milk, I also add the spices at this time
Mix everything to incorporate well
Put this mixture in the prepared baking sheet
Cut the butter into equal slices and place them on the potato mixture
Place the pork chops on the cheese and potato mixture
Bake 50 to 55 minutes at 350*
Halfway through cooking, turn the pork chops
Check the ham to make sure it’s no longer pink, and if it is, continue cooking for another 15 minutes.
Prick the potatoes with a fork to check their softness. If they also need a longer time, line the baking sheet with aluminum foil to prevent the meat from drying out.
