Ingredients:
1 big carrot, peeled and cut into pieces (approximately 80g)
1 cup (90g) of gluten-free old-fashioned rolled oats.
1 cup (150g) of Medjool dates without pits.
1/2 cup of pecans, which is equal to 50 grams.
1 cup (80g) of shredded coconut without sugar, separated into parts.
1 teaspoon of vanilla extract, which is 5 milliliters.
1/2 teaspoon of ground cinnamon, which is equal to 1 gram.
1/4 teaspoon of ground ginger, which is equal to 0.5 grams.
1/8 of a teaspoon of ground nutmeg, which is equal to 0.25 grams.

Get the carrots ready.
Put the chopped carrot in a food processor. Blend until finely chopped. Move the shredded carrot to a bowl and leave it there.
Mix the main ingredients together.
In the same blender, mix together the oats, dates, and pecans. Press the button until the mixture becomes finely ground and begins to stick together.
Add the seasonings:
Put the grated carrot, 1/2 cup of shredded coconut, vanilla extract, cinnamon, ginger, and nutmeg in the food processor.
Keep blending until the mixture is thoroughly mixed and turns into a sticky dough.
