Ingredients:
300g sausages (mild or spicy), chopped
250g cream cheese, softened
200g cheddar, grated
1 tin diced tomatoes (400g), drained
1 onion, chopped
2 cloves garlic, minced
1 tbsp olive oil
1 tsp paprika
Salt and pepper to taste
Tortilla chips or toast to serve
Instructions:
To make the sausage:
Heat the olive oil in a large frying pan over a medium heat.
Add the sausage pieces and cook until golden brown.
Remove from the pan and reserve.
To make the sauce:
In the same frying pan, add the onion and garlic and fry for 3-4 minutes until soft.
Add the tomatoes in the stock cube and cook for a further 2-3 minutes.
Reduce heat and stir in cream cheese and grated cheddar, blending until cheese is melted and creamy.
Assembly:
Return cooked sausage to skillet and mix well with cheese sauce. Season with paprika, salt and black pepper.
Serve:
Serve warm with tortilla chips or toast for dipping.
