How to Make Savory Shredded Chicken with Creamy Gravy Over Mashed Potatoes
Step 1: Prepare the Chicken
- Cook the chicken: In a slow cooker or pot, place the chicken breasts. Add garlic powder, onion powder, salt, pepper, and chicken broth. Cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender and easily shredded. Alternatively, you can boil the chicken in a pot of water until fully cooked, about 20-30 minutes.
- Shred the chicken: Once cooked, remove the chicken from the pot and shred it using two forks. Set aside.
Step 2: Make the Gravy
- Prepare the roux: In a saucepan, melt the butter over medium heat. Once melted, whisk in the flour, stirring constantly for about 1-2 minutes until golden brown.
- Add the broth: Gradually whisk in the chicken broth, ensuring there are no lumps. Bring to a simmer and cook until the gravy thickens, about 3-5 minutes.
- Finish the gravy: Stir in the heavy cream and season with salt and pepper to taste. Let it simmer for another minute before removing it from the heat.
Step 3: Make the Mashed Potatoes
- Cook the potatoes: In a large pot, add the cubed potatoes and cover with cold water. Bring to a boil and cook until the potatoes are fork-tender, about 15-20 minutes.
- Mash the potatoes: Drain the potatoes and return them to the pot. Add milk, butter, salt, and pepper. Mash until smooth and creamy. Adjust the seasoning to taste.
Step 4: Assemble the Dish
- Serve: On a plate, create a generous serving of mashed potatoes. Top with shredded chicken and drizzle with creamy gravy.
- Garnish: Optionally, garnish with fresh herbs like parsley or chives for a pop of color and flavor.
