Step 1: Sear the Steaks
Pat the sirloin steaks dry with paper towels, then season both sides with salt and black pepper.
Heat 1 tbsp olive oil in a large skillet over medium-high heat. Once hot, add the steaks.
Sear each side for about 3-4 minutes for medium-rare, or adjust cooking time to your preferred doneness.
Transfer the steaks to a plate and tent with foil to keep warm.
Step 2: Sauté the Mushrooms
In the same skillet, add 1 tbsp butter and the remaining olive oil.
Add the sliced mushrooms and cook for about 5 minutes, stirring occasionally, until golden brown.
Add the minced garlic and cook for another 30 seconds until fragrant. Remove the mushrooms and set aside.
Step 3: Make the Herb Sauce
Lower the heat to medium, add the remaining 1 tbsp butter, and let it melt.
Stir in the chicken or beef broth, Dijon mustard, thyme, and rosemary. Let the sauce simmer for about 2 minutes.
Pour in the heavy cream and continue to cook for 3-4 minutes, stirring until the sauce is thickened and creamy.
Step 4: Combine and Serve
Return the steaks and mushrooms to the skillet, coating them with the herb sauce.
Serve the steaks topped with mushrooms and a generous drizzle of herb sauce.
Garnish with fresh parsley and enjoy!
This Savory Sirloin Steak with Mushrooms and Herb Sauce is the perfect, comforting dinner—rich and flavorful with a touch of elegance.
