SLOW COOKER CREAMY SAUSAGE & TORTELLINI SOUP RECIPE

Ingredients:

  • 1 lb Italian sausage, casings removed
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Salt and black pepper, to taste
  • 1 package (9 oz) refrigerated cheese tortellini
  • 2 cups fresh spinach leaves
  • 1 cup heavy cream
  • Grated Parmesan cheese, for garnish
  • Fresh parsley, chopped, for garnish

Instructions:

1. Brown the Sausage

  • In a large skillet, brown the Italian sausage over medium heat, breaking it into smaller pieces with a spoon as it cooks.
  • Once the sausage is fully cooked and browned, transfer it to a slow cooker using a slotted spoon, leaving any excess grease behind.

2. Saute the Aromatics

  • In the same skillet, saute the chopped onion and minced garlic until they are soft and translucent, about 3-4 minutes.
  • Transfer the sauteed onion and garlic to the slow cooker, on top of the cooked sausage.
