Ingredients
For the Meat:
- 2 pounds beef chuck roast, trimmed and cubed
- 1 pound pork shoulder, diced
- 1 pound lamb stew meat, cut into bite-sized pieces
- Salt and black pepper, to taste
For the Vegetables:
- 4 carrots, peeled and sliced
- 3 celery stalks, chopped
- 1 onion, diced
- 4 cloves garlic, minced
- 1 cup mushrooms, sliced
For the Flavor Base:
- 2 cups beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 2 tablespoons Worcestershire sauce
- 2 bay leaves
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 1 teaspoon paprika
- 1/2 teaspoon red pepper flakes (optional)
For Thickening (Optional):
- 1/4 cup all-purpose flour
- 1/4 cup water
