Preparation:
To make this easy ricotta and apple cream filled tart, we start by preparing the shortcrust pastry base.
In a bowl, mix the flour with the icing sugar and baking powder, add the butter and start kneading.
Once the sandy mixture is obtained, add the yolk, the lemon zest and if you need a little milk, mix everything.
Once you have obtained a homogeneous shortcrust pastry, wrap it in plastic wrap and let it rest in the refrigerator for an hour.
In the meantime, prepare the filling, simply work the ricotta with the sugar, the lemon zest and the eggs, until you obtain a homogeneous cream without lumps.
Spread the shortcrust pastry on a floured work surface and coat, creating a shell, a buttered and floured cake pan measuring 22-24 cm.
