1. Preheat the oven to 400°F (200°C).
2. In a small bowl, mix paprika, chili powder, garlic powder, onion powder, salt, and black pepper.
3. Rub the seasoning mix evenly over the chicken thighs.
4. In a large oven-safe skillet or baking dish, add olive oil, then place the seasoned chicken thighs skin-side up.
5. Scatter the sliced bell peppers and onion around the chicken in the skillet.
6. Roast in the preheated oven for 35–40 minutes, or until the chicken is cooked through and the skin is crispy.
7. Garnish with fresh cilantro before serving.
**Tip:** Serve with rice or warm tortillas to soak up the juices.
