Strawberry Cheesecake Stuffed Cookies

Mix cream cheese, sugar, vanilla, and strawberry jam/puree until silky.
Cover and place in the fridge while you work on the cookie dough.
Cream butter, white sugar, and brown sugar until light and airy.
Blend in the egg and vanilla until the mixture is smooth.
In another bowl, combine flour, baking soda, baking powder, and salt.
Gradually integrate dry mixture into the wet to form a smooth dough.
Mix in the crushed freeze-dried strawberries.
Cover dough and cool it in the fridge for 30 minutes.
