Ingredients:
For the Filling:
- 12 jumbo pasta shells
- 2 cups cooked shredded chicken
- 4 ounces cream cheese, softened
- 1/4 cup buffalo sauce (adjust to taste)
- 1/4 cup ranch dressing
- 1/2 cup shredded mozzarella cheese
- 2 green onions, thinly sliced
- Salt and pepper, to taste
For the Topping:
- 1/2 cup buffalo sauce
- 1/2 cup shredded mozzarella cheese
- 2 green onions, thinly sliced
Directions:
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.
- Cook the jumbo pasta shells according to the package instructions until al dente. Drain and set aside to cool.
- In a large mixing bowl, combine the shredded chicken, cream cheese, buffalo sauce, ranch dressing, shredded mozzarella cheese, and sliced green onions. Season with salt and pepper to taste.
- Spoon the buffalo chicken mixture into the cooked pasta shells, filling each shell until full.
- Arrange the stuffed shells in the prepared baking dish in a single layer.
- Drizzle the remaining 1/2 cup of buffalo sauce over the stuffed shells, then sprinkle with the remaining shredded mozzarella cheese.
- Cover the baking dish with foil and bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Remove the foil and bake for an additional 5-10 minutes, or until the cheese is golden brown and bubbly.
- Remove from the oven and sprinkle with sliced green onions before serving.
