Sugar-Free Oatmeal Apple Banana Pancakes
Make the oats:
In a large bowl, combine the oats and water. Let sit for a few minutes until the oats soften.
Make the apple and banana:
Grate the apple and mash the banana. Add to the softened oats.
Mix the ingredients:
Add the egg and vanilla extract to the oat mixture. Mix well until all ingredients are completely combined.
Cook the pancakes:
Heat a small amount of oil in a non-stick frying pan over medium heat.
Pour small amounts of batter into the pan to form crepes. Cook for about 2-3 minutes on each side, or until golden brown and cooked through.
Repeat with the remaining batter, adding more oil to the pan if necessary.
To serve:
