Peel the yam and cut it into chunks. Place the yam chunks in a pot of water and bring to a boil. Cook until the yam is soft and can be easily pierced with a fork. Drain and mash the yam in a bowl.
Add the chopped onion, ground black pepper, paprika, salt, grated cheese (if using), and chopped parsley (if using) to the mashed yam. Mix everything together until well combined.
Using your hands, form the yam mixture into small balls.
Roll each ball in flour, then dip it in the beaten eggs, and finally coat it with breadcrumbs. Ensure each ball is evenly coated.
In a frying pan, heat vegetable oil over medium heat. The oil should be about 1-2 inches deep.
Carefully place the yam balls in the hot oil and fry until golden brown and crispy on all sides. Remove with a slotted spoon and drain on paper towels to remove excess oil.
Serve the yam balls warm as a snack or side dish.
