Zucchini Patties

Ingredients:

  • 2 medium zucchini, grated (about 2 cups)
  • 1 teaspoon salt
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh herbs (such as parsley, basil, or dill)
  • 2 cloves garlic, minced
  • 1/4 cup finely chopped onion
  • 1/4 teaspoon black pepper
  • 2 large eggs, lightly beaten
  • Olive oil, for brushing

Directions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.
  2. Place the grated zucchini in a colander set over a bowl. Sprinkle the salt over the zucchini and let it sit for 10-15 minutes to release excess moisture.
  3. Squeeze the grated zucchini with your hands to remove as much liquid as possible. Transfer the squeezed zucchini to a clean kitchen towel and squeeze again to remove any remaining moisture.
  4. In a large mixing bowl, combine the grated zucchini, breadcrumbs, Parmesan cheese, chopped herbs, minced garlic, chopped onion, black pepper, and beaten eggs. Mix until well combined.
  5. Using your hands, shape the mixture into patties, about 2-3 inches in diameter and 1/2 inch thick. Place the patties on the prepared baking sheet, leaving a little space between each one.
  6. Lightly brush the tops of the patties with olive oil.
  7. Bake in the preheated oven for 20-25 minutes, or until the patties are golden brown and crispy on the outside, flipping halfway through baking for even browning.
  8. Remove the patties from the oven and let them cool slightly before serving.
