Banana Pudding Cheesecake
Instructions:
Make the crust: Mix the crushed vanilla wafers and melted butter. Press into the bottom of a 9-inch springform pan. Chill.
Make the cheesecake layer: Whisk together the cream cheese and sugar until smooth. Add the eggs one at a time. Mix in the mashed bananas and vanilla. Pour over the crust.
Bake: Bake at 325°F (160°C) for 60-70 minutes until set. Cool completely.
Make the pudding: In a bowl, whisk the banana pudding mixture with the cold milk until thick. Spread over the cooled cheesecake.
