Chicken Skewers
Preparation:
First, blanch the cabbage leaves.
Spread out the chicken breast and stuff it with a cabbage leaf, a slice of cooked ham and a sprinkling of parmesan.
Roll up the stuffed chicken breast and cut it into similar sized pieces, forming skewers.
Arrange the skewers on a baking tray lightly greased with olive oil.
Sprinkle the skewers with corn breadcrumbs and season with a drizzle of extra virgin olive oil and a light sprinkling of salt.
Bake at 180°C for 15-20 minutes or until the chicken is cooked and golden.
Serve the chicken skewers hot, perhaps accompanied by vegetable or salad sides. Enjoy!
